This blueberry cake is very easy to make.The crunchy butter and brown sugar topping give the cake extra flavor and texture. Using fresh blueberries in the cake makes it a perfect summer treat, especially if you grow them yourself. If not then you can always buy them fresh from the farm. If that isn’t possible, feel free to use frozen blueberries.
- 2 Cups Blueberries
- 1/3 Cup Butter
- 1 Cup Sugar
- 1 Egg
- 1/2 tsp Vanilla Extract
- 1 Cup Milk
- 2 1/2 Cup Flour
- 1/2 tsp Salt
- 4 tsp Baking Powder
- 1 Pinch Cinnamon
- 1 Pinch Cloves Ground
In a mixer, blend the butter and sugar together.
Add the egg and vanilla extract and continue blending.
In a bowl, mix the flour, salt, baking powder, cinnamon and cloves together.
Add the dry ingredients and milk gradually and alternately while whisking continuously.
Mix the blueberries with a quarter cup of flour (to prevent the fruits from dropping to the bottom of the cake during the baking).
Add the blueberries to the cake batter and mix carefully with a spoon.
Pour the mixture in a greased cake pan, then move the pan to a 190○C preheated oven and bake for 45 minutes till fully baked.
Remove the cake from the oven, and leave it to cool for 5 minutes then remove the cake from the pan.
